Ingredients:
6 oz. raw chicken breast, cut into chunks
4 cups red bell pepper, cut into large pieces
3 cup broccoli florets
6 cups whole mushrooms
2 tsp apple cider vinegar
4 cups sliced tomato pieces
5 tsp olive oil
1 tsp basil
1 cup chicken broth, condensed
1 tsp oregano
2 cloves garlic finely peeled and chopped
100g greek yogurt
Instructions:
1. Combine oil, chicken broth, vinegar, basil, oregano, yogurt and garlic in baking dish to create a marinade
2. Prepare eight skewers
3. On each skewer place, chicken, pepper, broccoli, mushroom and tomato, do this until all ingredients are on the skewers
4. Place skewers in marinade
5. Seal with foil
6. Bake for 20 minutes in pre heated oven at 350 degrees
7. Remove foil and continue to bake for another 10 minutes.
8. Serve
