Serives 2

 

Ingredients:

 

6 chicken breasts cut in half,

350g greek yogurt,

2-3 fbsp Thai curry paste,

4 tsp chopped cilantro,

3 inch cucumber,

Lime wedges and salad leaves to serve

 

 

Instructions:

 

1. Preheat oven to 375 degrees

2. Put the chicken in a shallow dish.

3. Blend in the currey paste, a third of the yogurt and three tsp of cilantro in another bowl

4. Season till desired with salt

5. Pour over the chicken

6. Make sure each piece is evenly coated

7. Leave for 10 minutes

8. Place chicken onto a rack in a roasting tin and roast for 40 minutes

9. Blend together remaining yogurt and cilantro.

10. Finely chop cucumber and stir into mixture

11. Serve and eat!
